Huzzah! I love meatballs, and the Meatball Shop is too far to walk to. I miss Nathan's fries, the best on the planet, though...

Mmmmm. Look at all those steaming wieners. Do you know what they're saying? They're saying, "This is the year that Fink beats 'The Stomach'."
My Homemade Italian-style Meatballs
ReplyDelete1/2 medium-sized onion, minced
1 clove garlic, minced
2 tbs parsley, minced
1/4 cup grated Parmigiano Reggiano
1/2 cup quick quick cook oatmeal
1 pound mixed ground pork, beef, veal
1 tsp sea salt
ground pepper
1/4 cup water
Combine the ingredients in a mixing bowl. Make into meatballs. Bake on greased cooking sheet at 350 F for 30 minutes (easier and less spattery than cooking in a frying pan on top of the stove, but use the stove if you like a nice deep dark brown crust).
Add meatballs to homemade tomato sauce or chicken broth. Simmer covered for 45 minutes. They're ready to go.
A note: Italians, like Asians and Mexicans, seem to prefer their meatballs served in broth.
