Virginia's eyes a March debut in new 3rd Street home

Virginia's is expected to open in mid-March ("give or take a few days") in the restaurant's new outpost at 200 E. Third St., just west of Avenue B.

According to the Virginia's Instagram account, they are hiring waitstaff and bussers. (Contact info is on the post.)

Virginia's closed on 11th Street at Avenue C on New Year's Eve 2021. Their lease was up, and ownership decided to look elsewhere for a new space for the bistro that opened in May 2015.

The last tenant here, Root & Bone, closed last April after eight years in business.

A new East Village home for Virginia's

Virginia's looks to have a new East Village home at 200 E. Third St. ... the former Root & Bone space...
The restaurant's ownership will appear before CB3's SLA committee tonight for a new liquor license for the address just west of Avenue B. 

The questionnaire on file at the CB3 website shows proposed hours of 11 a.m. to midnight Monday-Thursday, with a 10 a.m. start Friday through Sunday (with a midnight close). A sample menu with the questionnaire shows a brunch service. The plans call for seats/tables for 52 diners with a four-seat service bar.

Virginia's is closing on 11th Street; owners will look for a new location

Virginia's, the bistro on 11th Street just west of Avenue C, is closing after service on New Year's Eve. 

Per an email to patrons (thanks to the EVG readers who shared this): 
We have battled through a pandemic and a fire, either of which would have been reason enough to give up. Instead, we persevered — mostly because of the support of our loyal guests and hardworking team. 

With our lease expiring, we have made the very difficult decision to leave our current location in the New Year. Hopefully, this is only goodbye for now as we search for a new home for Virginia's. 

Please stay tuned as we search for a larger location with a longer lease. Thank you all so much for all of your support. We hope to see you once more on New Year's Eve for an unforgettable farewell party!

Virginia's reopens after December fire next door



A late-night fire on Dec. 23 temporarily put two restaurants — Fiaschetteria Pistoia and Virginia'sout of commission here on 11th Street near Avenue C.

Vinny & O, who shared the photos on this post, reported that Virginia's reopened this past Friday night for the first time since the fire, which started next door at Fiaschetteria Pistoia.

Meanwhile, Fiaschetteria Pistoia remains closed (they were originally hoping to reopen last month).

More than 60 firefighters battled the blaze. (A cause has not been revealed.) There weren't any reports of injuries, though parts of the kitchen and dining room at Fiaschetteria Pistoia, which debuted in 2017, were damaged.



The sign on the door notes: "Unfortunately, because of a fire, we will be closed for renovations for a bit more time."



Fans of Fiaschetteria Pistoia's Tuscan-style food can still visit their new outpost at 114 Christopher St., near Bedford Street that opened in the beginning of January.

Virginia's is now open on East 11th Street

Virginia's opened last evening at 647 E. 11th St. between Avenue B and Avenue C. (The space was formerly the short-lived Sliders.)

Parters in the new venture are Christian Ramos, former sous chef of Per Se, and Reed Adelson, formerly of Locanda Verde.

Here's some of the info that reps for the restaurant sent us yesterday via email:

The duo first met while working at Charlie Trotter’s in Chicago, and now years later have partnered to debut their first restaurant in NYC.

The cozy 38-seat space is named Virginia’s after their mothers’ coincidental shared name, and features a vibrant and accessible American menu rooted in chef Ramos’ classic training at Per Se and other fine dining establishments. Chef Ramos’ market-driven menu features dishes such as:

• Crispy Sweetbreads with apricot, pea Leaves, and charred lemon
• Seppia a la Plancha with asparagus, green garlic, and togarashi mayonnaise
• Roasted Duck Breast with fermented soybean, plum and breakfast radish
• Stuffed Suckling Pig with marinated fennel, strawberries and sherry vinegar
• Atlantic Striped Bass, saffron, Manila clams, and new crop potatoes

While desserts from sous chef Lauren Calhoun, formerly of Roberta’s and Charlie Trotter’s, include Chocolate Beet Cake with beet cream, shaved Oaxaca chocolate and amaretti; and Raw Honey Panna Cotta with rhubarb compote, pickled rhubarb and rye biscotti.
