Our old friend Hunter-Gatherer was told by a construction worker last summer that Evolution would feature "flipping bottles, fire tricks…you know, bringing a Las Vegas style bar to New York."

When I go to a bar, I want my vodka served quickly. The faster the better. The bigger the shot the better. This circus act would just annoy the frig outta me, forcing me to leave. But not before grabbing the bottle in mid-air and helping myself to some directly from spout.
Bars are for drinking. You want tricks, go to Ringling Bros.
